Spring brings Vidalia onions, a sweet seasonal treat. Try this tasty and simple dip, then marvel at how it disappears faster than springtime in Tennessee.
2 cups chopped Vidalia onions
2 cups shredded Swiss cheese
1 cup mayonnaise
Salt and pepper to taste
Tortilla chips, wavy potato chips, pita chips, crackers or crudité for serving
Spray 2-quart casserole dish with nonstick spray and mix onions, cheese and mayonnaise. Add salt and pepper to taste, then wipe any excess dip from top rim of dish with a towel. Bake at 375 degrees for 22-25 minutes and serve hot with chips, crackers or crudité.
