4 slices of favorite bread (recommendation: something firm like ciabatta)
1/4 cup mayonnaise
1/4 cup of pesto
1 1/2 cup shredded, cooked chicken
6 oz. cheese (mild like mozzarella or provolone)
1 tomato, sliced
Olive oil or butter
Lettuce (optional)
Mix together pesto and mayonnaise. Spread desired amount of pesto mayo onto bread. Pile shredded chicken, cheese and tomato slices onto sandwich. Add second piece of bread. Pour 1/2 teaspoon of olive oil or butter in large pan over medium heat. Place sandwich on pan and cook for 2-3 minutes, flip and cook another 2-3 minutes, or until the cheese is melted.
