1 1/2 lb. sweet potatoes, peeled and cubed
2 tbsp. butter
1 tbsp. lime juice
1 tbsp. honey
1/4 tsp. ground chipotle chili pepper
2 cloves garlic, peeled and halved
1 tbsp. chopped fresh cilantro
Combine all ingredients except cilantro in large bowl. Turn to mix, then spoon onto center of 18×30-inch piece of aluminum foil. Wrap loosely around mixture, sealing edges with double fold. Place on another sheet of foil and seal edges with double fold in opposite direction. Grill 20 minutes or until potatoes are tender, shaking occasionally and turning once. Just before serving garnish with cilantro.
