2-3 large green tomatoes (sliced 2-inch thick)
Prepared egg wash (whisk 1 egg with tbsp. water, set aside)
1/2 cup flour
1 1/2 cup Panko breadcrumbs
Set up assembly line, placing egg wash, flour and Panko breadcrumbs in individual dishes. Coat tomato slices first with flour, followed by egg and Panko, and place on baking sheet. Repeat steps until all tomato slices are coated. Spray tomatoes with non-stick coating to help brown in oven. Cook at 400 degrees in oven until golden brown on both sides. Add tomato to casserole dish, then top with favorite sauce or marinara and sprinkle mozzarella cheese on top of sauce. Bake until cheese is melted.
Note: This can be made as spaghetti. Fry tomatoes before they turn red for tangy and delicious dish. Feel free to add seasoning to your liking.
