Cake
1 box yellow butter cake mix
3/4 cup cooking oil
4 eggs
1 (11-oz.) can Mandarin oranges, including juice
Mix and beat 3 minutes. Pour into two greased/floured 9-inch cake pans. Bake at 350 degrees for 25 minutes.
Frosting
1 box vanilla instant pudding
1 (9-oz.) container Cool Whip
2 (8-oz.) cans crushed pineapple, including juice
Mix and spread between layers and on top/sides of cooled cake. Keep refrigerated for a light, airy dessert perfect for summertime.
