Egg Bites

Recipe inspired by Your Barefoot Neighbor

6 eggs
1 1/4 cup egg whites (or substitute 6 additional eggs)
1 cup cottage cheese
4-6 oz. shredded cheese such as cheddar, smoked gouda or Gruyère
3-5 slices bacon cooked and crumbled (can substitute sausage or vegan chorizo)
1/2 tsp. each of salt and cracked black pepper

Preheat oven to 350 degrees and spray 12-count muffin pan (silicone works well) lightly with nonstick spray. Whip cottage cheese in food processor or blender for at least 30 seconds, then add eggs and whir again. Distribute shredded cheese evenly among muffin cups, ladle in egg mixture evenly and top with bacon crumbles. Bake for 30 minutes or until eggs are set.
