1 cup vegetable oil
2 eggs
2 cups sugar
3 cups plain flour
1 1/2 tsp. baking soda
2 tsp. nutmeg
2 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla extract
1/2 cup chopped nuts
3 cups chopped apples
Whipped cream
In one bowl, mix well vegetable oil, eggs and sugar. In second bowl, sift together plain flour, baking soda, nutmeg, cinnamon and salt. Add liquid ingredients to dry ingredients and mix until moistened. Add vanilla extract, chopped nuts, and chopped apples. Bake 1 hour and 20 minutes in greased and floured tube pan. Cool, remove from pan, transfer to cake plate and cover. Can be kept several days at room temperature. Don’t dare serve without whipped cream or Cool Whip, though it would still be delicious without it.
