This cake looks like it came from a bakery yet comes together quickly in a blender or food processor. No fussy layers or tons of leftovers make it perfect for a small gathering. Whip up some cream with a touch of almond flavoring and add fresh berries for a decadent delight.
Cake:
4 oz. almond paste (in baking aisle)
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
3 large eggs
1/2 tsp. almond extract
1/2 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
Topping:
1/2 cup sliced almonds
1-2 tbsp. granulated sugar
Optional toppings: powdered sugar, whipped cream, fresh berries, fruit jam
Preheat oven to 350 degrees. Line bottom of greased 8-inch round cake pan with parchment paper.
In bowl of a food processor or blender, pulse almond paste and granulated sugar until almond paste is finely ground. Add butter and process until smooth – it’s OK if it turns into a ball.
Add eggs and almond extract and process until combined, occasionally stopping to scrape sides of bowl.
Sprinkle in flour, baking powder and salt; process until blended.
Pour batter into prepared pan and smooth top. Top with sliced almonds and 1-2 tablespoons of granulated sugar.
Bake for 23-26 minutes, until toothpick inserted into center comes out clean. Cool for 30 minutes on wire rack, then remove it from pan.
If desired, dust cake with powdered sugar (yes, please) and serve with whipped cream, berries or jam.
