Lemon Creme Chess Bars

Base
1 box lemon or yellow cake mix
1 egg, room temperature
1 stick butter or margarine, slightly softened

Topping
8 oz. cream cheese, softened
2 eggs
1 (1 lb.) box confectioners’ sugar
1 tsp. vanilla or 2 tsp. lemon extract

Heat oven to 350 degrees. Grease 9-x-13-inch baking pan. Mix cake mix, egg and butter with mixer until combined. Spread evenly in bottom of pan. Set aside, wash beaters. In another bowl, beat cream cheese, eggs, sugar and extract for 5 minutes. Pour over base. Bake at 350 degrees for 40 minutes. Cut when cool into 36 bars. Very lemony when made with lemon cake mix and lemon extract. Milder with yellow cake.
